Boiled Salad with Carrots, Broccoli, and Cauliflower

Boiled salad is blanched vegetables that are crisp with upward rising energy. During blanching, vegetables turn bright colors, which are water soluble vitamins B and C coming to the surface. Vary seasonal vegetables and combinations daily. Serve with dressing or sauce.

INGREDIENTS | SERVES 3

Spring water, as needed

1 cup cauliflower florets

1 cup broccoli florets

1 cup carrots, cut into matchsticks

Umeboshi vinegar, optional

Fill a saucepan with several inches of water. Bring to a boil.
